Egg Fried Rice

Ingredients - Serves 2-4

3½ cups of cooked rice

2 large eggs

½ tablespoon sherry

Oil to cook

6 scallions, chopped

½ cup Chinese roast port or ham, diced

⅓ cup cooked peas

1 tablespoon soy sauce

Pepper to season

1 tablespoon of chicken broth


1.  Beat sherry with egg

2.  Scramble egg mixture, break into pieces

3.  Break rice into pieces, and sauté until warm through

4.  Add soy sauce and chicken broth

5.  Add eggs, peas and ham, toss
